fruit pizza

this summer, i've teamed up with my friends at terminix service to share some great ways to enjoy time with your friends and family outdoors. since south carolina gets hot fast, when you have someone over for a glass of wine on the porch, you need something light and refreshing to snack on while you chat. that's why one of my favorite parts about spring is all the fresh fruit that starts popping up in the grocery store. the other day i figured that instead of making a traditional fruit salad, a fruit pizza would be a fun (and much healthier) twist. so, i traded in the mozzarella for feta and used blackberries, strawberries and kiwi instead of olives, pepperoni and peppers. i also love to put ranch on my pizza, so i made a little dip to go on top of the fruit version. it was just the right balance of sweet and savory, and it looked gorgeous on the table. if you want to make your own, here's what you'll need:

half a watermelon
4 oz feta cheese
2 kiwis
3 strawberries
a handful of blackberries

cut the watermelon into triangular slices, then lay flat on a serving tray like a pizza. sprinkle with feta cheese. chop the remaining fruit and sprinkle over watermelon. (i made the mistake of not assembling my pizza on my serving tray the first time. it's kind of tricky to transfer, so i highly recommend assembling on the tray.)

fruit dip
1 cup light sour cream
1/2 cup brown sugar
4 tsp grand marnier

whisk all ingredients together in a bowl. dip or squeeze onto your pizza!
