Cooking Your Way Through Pintrest: Chicken Parm Orzo

is it rice? is it pasta?

I stumbled across this delicious looking bowl of orzo on Pintrest a few weeks back, and let me tell you-it tastes even better than it looks.  Plus, there's spinach in it, so you can pretend it's kind of healthy!  Justin grilled some chicken to add to our batch to make it a little heartier for dinner.  Whether you consider orzo a side like rice or a main course like pasta, you'll be asking for second helpings either way!

Chicken Parm Orzo adapted from Life as a Strawberry
2 1/2 cups orzo
2 chicken breasts
2 tbsp olive oil
2 green onions, chopped
2 tsp flour
1 clove garlic, minced
1 cup milk
2/3 cups spinach, chopped
1/2 cup parmesan cheese, shredded, plus extra for garnish
salt and pepper to taste

Cook orzo according to package directions. Set aside.
Toss chicken with salt and pepper. Grill to your liking. Chop into strips or bites and set aside with orzo.
Heat olive oil in skillet over medium heat. Add onions, garlic, salt, and pepper and saute for 1 minute or until onions are clear. Add flour to form a roux and cook for an additional minute.
Add 1/4 cup of the milk to the skillet and whisk together to work out any lumps. When smooth, add the remaining milk and whisk again to combine. Bring to a simmer and cook until sauce has thickened, about 8 minutes.
Add chopped spinach to sauce and cook an additional 2 minutes or until spinach has cooked down. Remove sauce from heat.
Stir parmesan cheese into sauce. When cheese has melted, add cooked orzo and chicken to sauce and toss to coat. Top with extra parm and enjoy!
