Peggy's Mac n Cheese

a Howell family tradition

image via Two Bite Club

Yesterday, our friends Janine and Justin B. got into town.  They're staying with us for a week over their spring break.  For dinner, Justin made pork chops, and I made macaroni and cheese.
I got the recipe from my cousin Peggy who started making it at Thanksgiving a couple years ago, and now the dish has become a staple of our dinner.  It's so easy and good to the last bite.  You just bake it in the oven, and you can probably make it with things you already have lying around your kitchen.  I actually forgot to take a picture for the blog, and we didn't leave much left over; but the picture above is really similar to what you can expect when you make it.

Peggy's Mac n Cheese
1/2 box macaroni
1 stick margarine
3 cups grated cheese
6 eggs
4 1/2 cups milk
salt and pepper to taste

Cook macaroni until tender, then drain.

Mix all ingredients with macaroni and pour into a greased casserole dish.  Add more cheese on top if desired.

Bake at 375 degrees for 35-40 minutes or until golden.

*Note: Center may be a little soupy, but it will thicken as it cooks.
