Cooking Your Way Through Pintrest: Sweet & Spicy Avocado Grilled Cheese

sort of nutritious, definitely delicious


There are so many delectable looking avocado grilled cheeses on Pintrest, it's almost overwhelming.  They probably make up a good 1/4th of my food board, with another 2/4th's being other avocado recipes.  So, I was pleasantly surprised when Justin dug up this gem from the bowels of my board; it must have been the very first thing I pinned on there.  Usually, the staples of the avocado grilled cheese are mozzarella and tomato, throw in some pesto here and there.  If you look closely in the picture though, the red part isn't a tomato-it's an apple!  Somehow this recipe manages to put an American spin on an American classic.

Sweet & Spicy Avocado Grilled Cheese via Jana Laurene

Ingredients
2 slices sourdough bread
1 slice pepper jack cheese
1/2 avocado
2 strips bacon
1/2 red apple 

Directions
Butter your bread.  Seems like a no-brainer, but I have forgotten on more than one occasion only to have to take apart my sammie and start from the beginning.

Cut up your fruits while the bacon cooks.  (We used maple bacon which made the sandwich even sweeter and was a great contrast with the pepper jack.)  Make sure to slice your apple and avocado thinly, otherwise it will be really difficult to keep your sandwich together while flipping it on the griddle.

Once the bacon has cooked, assemble your fixings in any order you like and fry 'er up!
